The Dalmore uses a completely unique cask finish to create their revered 25 year old. Matured initially in American white oak, the whisky is carefully divided into rare hand-sourced 25 year old sweet Palomino Fino sherry butts and 1980 first fill bourbon casks. These exceptional whiskies are then expertly married together in bourbon barrels before being transferred, for the final time into Tawny Port pipes from Portugal, for a totally unrivalled finish. The 25 showcases the dedication and creativity of Richard Paterson in his pursuit to find incredible casks for The Dalmore.

Introduced in 2007, this 18yo Jura was brought in to replace the discontinued 21 year-old. Often overlooked for it's neighbour, Islay, Jura is a beautiful island full of deer and is where George Orwell finished writing Nineteen Eighty-Four. Created in 1874, with an unceasing quest for quality within the House of Remy Martin- LOUIS XIII Greand Champagne Cognac is truly the King of Cognacs. Four generations of cellar masters are necessary to create this exceptional blend of 1,200 od the most carefully selected eaux-de-vie from the Grande Champagne region, aged up to 100 years in Tiercons, century - oldcasks made of Limousin oak. One sip, and the preciousnectar's mahagony colour unveils a cognac with an exceptionally lingering taste, a polyphony of tastes evoking dried fruits, the smell of incence with hints of sandalwood. With the next sip comes an explosion of countrless aromas unveiling the softness and smoothness of eaux-de-vie. The stunning John Walker & Sons XR21 recalls the rich colours and bold forms, a superior blend of exceptional smoothness and depth that contains extremely rare whiskies aged for a minimum of 21 years - including some from distilleries no longer in existence. Crafted using extra rare whiskies from american and european oak casks, it is imbued with subtle vanilla and golden honey notes and has an incredibly smooth finish. A special edition release of Johnnie Walker, this 21 year old expression was inspired by the blending notes of Sir Alexander Walker. Featuring whisky from the extensive Johnnie Walker stocks, the XR 21 Year Old is even said to include whisky from the now-silent Brora distillery. Exciting stuff from Johnnie Walker!    

A much sought-after single malt with the massive peat-smoke that's typical of southern Islay - but also offering richness and a dryness that turns it into a truly interesting dram. The 16 year old has become a benchmark Islay dram from the Lagavulin distillery.

The return of the name Reserva to Glenfiddich's 21yo after a few years under different titles is also accompanied by an upgrade to its packaging. It is still finished in rum casks for four months, but now has a more elegant presentation, as befits its position towards the top of the distillery's regular range.

First released in April 2008, this is the oldest permanent expression of Highland Park and is and the culmination of years of our finest whisky making experience.

The Balvenie DoubleWood 12 year old single malt whisky gains its distinctive character from being matured in two wood types. To make The Balvenie DoubleWood, David Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-bourbon barrels and hogsheads, and moves it to Spanish oak ex-Oloroso sherry casks for an additional nine months. The whisky is then transferred to large oak vessels called “tuns” for 3-4 months to allow the whiskies to “marry”. Each stage lends different qualities to the resulting single malt whisky. The traditional casks soften and add delicate character, the sherry wood brings depth and fullness of flavour and the final few months in our tuns allow the whiskies to marry harmoniously.
