The fruit for this vintage was extensively green thinned at mid-veraison to ensure
even ripeness. This premium fruit was harvested in the early morning while cool, and
hand sorted. The grapes were cold soaked for 5 days before inoculation to enhance
concentration of aroma and flavour compounds. The ferment was then allowed to
warm to maximum of 32 degrees, during which time the grapes were hand plunged
twice daily to extract colour and flavour. Once desired dryness was achieved, the
wine was inoculated with malolactic bacteria and went through a secondary
fermentation. As a fruit-forward styled wine, limited oak was used in the
maturation process to help showcase both an elegant style and the quality
of fruit this site produces.
Colour/Appearance: Pink rim and deep crimson core
Bouquet/Nose: Aromatics of ripe cherry, crushed flowers and hints of oak/tobacco
Palate/taste: Smooth powdery tannins, strawberry/cranberry flavours mingle with fresh herb accents.

G’Vine is batch distilled using a neutral grape spirit and fresh whole-fruit botanicals in France’s Cognac region. While the region may be known as the birth place of centuries-old distillation practices using the Ugni Blanc grape variety, in modern times G’Vine was the first to use it as a base spirit for gin.
